Cooking Challenge: Easy Ciabatta Pizza.

Last night I went to bed around 8 because I had a terrible migraine. It’s not something that happens often, I honestly can’t even remember the last time, but I knew I wouldn’t be able to make dinner so I hopped over to Subway.

As predicted, I woke up around 1am. Starving by 3, I decided to make something that I’ve been anxiously awaiting.

Ciabatta Pizza. Can I get an amen. This was easily the easiest and most delicious thing I’ve ever eaten. Unfortunately I didn’t take the ingredient picture, sorry. But there you have it.

A few differences to mine based on avaiability: I used 4 halves of Ciabatta rolls. I didnt have salted butter, so hello unsalted. I used a pre-grated cheese mixture. Only one tomato (because I don’t like them that much tbh). Only one giant basil leaf.

There my beloved sat in the oven just waiting to be devoured.

Added the tomato and basil and popped it back it for a little one minute heat up because eww cold tomatoes.

Added some more cheese to the top and popped it in for another minute or so, just for it to get melty.

Maybe not the most visually stunning but these are so delicious. Ciabatta is one of my top favorite breads and this was such a great way to utilize those rolls hiding in my cabinet. 

I recommend this so hard that if you don’t try this, I will find you and force you to. It took about 15 minutes total and was so worth it. I’ve had two in my 3am breakfast and will probably take the other 2 for lunch.
